
Mirai Matcha Muffins - Morning Sweets
Ingredients :
- 250g all-purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon salt
- 100g of sugar
- 2 tablespoons of high quality Matcha Mirai
- 120ml of whole milk
- 2 eggs, lightly beaten
- 80ml vegetable oil
- 1 teaspoon vanilla extract
- 100g white chocolate chips or nuts (optional)
Instructions :
- Preheat the oven to 180°C (350°F) and prepare a muffin tin with paper baking cups.
- Mix the dry ingredients: In a large bowl, sift together the flour, baking powder, salt, sugar and Matcha Mirai powder to blend the flavors well and eliminate lumps.
- Stir in the wet ingredients: In a separate bowl, mix the milk, beaten eggs, vegetable oil, and vanilla extract until well blended.
- Combine the mixtures: Add the wet mixture to the dry mixture and gently mix with a spatula until just combined. It is important not to overmix to ensure the muffins are light and fluffy.
- Add the white chocolate chips or nuts if you decide to use them. Gently fold them into the batter.
- Divide the batter among the muffin tins, filling each cup three-quarters full to allow room for rising.
- Bake: Bake for about 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Let the muffins cool on a wire rack for a few minutes before removing them from the molds.
