I selected this Assam TGFOP Second Flush from the Rembeng garden, in its organic version, for lovers of Indian black teas that are both dense and refined. Beautiful whole leaves, uniform and dotted with buds, deliver a mahogany cup with notes of malt, mild spices, and caramel. A characterful Assam, picked in the summer harvest, with great body.

Behind the acronym TGFOP lies the expression Tippy Golden Flowery Orange Pekoe. It designates a whole leaf tea with a good proportion of golden buds — the top of the Indian grading system, reserved for carefully selected batches. Here, this grade is associated with organic farming.

The whole leaves

This is not a breakfast broken tea. The leaves remain whole, uniform, and slightly twisted. In the cup, this results in a more gradual and nuanced aromatic rise, with a bright mahogany liquor rather than a block of raw power.

The buds

The tips are the young shoots still covered with a light fuzz. When oxidized, they bring a honeyed sweetness that rounds out the malty and spicy structure characteristic of Assam.

In a plain tasting cup

To fully appreciate this organic TGFOP, I recommend 2.5 to 3 g for 250 ml of water at 95-100°C, and an infusion of 3 to 4 minutes. You get a deep and clear cup where malt, caramel, and brown honey respond to each other without harshness.

Stronger version

If you like stronger black teas, steep up to 5 minutes. The tannins intensify, the liquor gains structure, while keeping the softness of the buds. A very light splash of milk can then soften the edges.

The art of sharing: the beautiful whole leaves of this grand cru support a second, longer infusion (5 to 6 minutes). The cup becomes woodier, with very pleasant dried fruit notes to discover.
