I designed Bonne Humeur as a sun-kissed green tea: a base of Chinese Sencha, orange peel, a touch of vanilla, and a scattering of rose petals and cornflower blossoms for the eye as much as the nose. The cup is round and indulgent, without ever becoming heavy.

Steeping timer

2 to 3 minutes at 70-80°C is enough: the orange and vanilla come through without the green tea turning astringent.

CompositionSencha, orange peel and vanilla

The base is a Chinese Sencha green tea, onto which I've layered orange peel and a natural orange flavouring for brightness, then a touch of vanilla to round out the cup.

Rose and cornflower

Rose petals and cornflower blossoms are scattered through the blend. They soften the aroma when you open the bag and add a subtle floral note, without overpowering the orange and vanilla.

CraftA balance between citrus and indulgence

The hardest part of an orange-vanilla green tea is stopping the vanilla from crushing the citrus. I searched for that balance where the orange stays bright on the first sip, before the vanilla arrives gently at the finish.

Hot cup

I recommend 3 to 4g per 250ml of water at 70-80°C, steeped for 2 to 3 minutes. Water that's too hot crushes the vanilla and brings out the Sencha's bitterness.

For an indulgent version

A splash of plant-based milk (oat or almond) extends the vanilla roundness even further, for a version closer to a light chai.

Little pleasure: I like to serve it warm, close to tasting temperature, to let the orange and vanilla fully express themselves.
