The golden rule of green tea

2 to 3 g for 250 ml of water at 70-80°C, 2 to 3 minutes. Do not exceed 80°C: this keeps the cup smooth and free of bitterness.

Re-steepings

Chun Mee supports one to two re-steepings. Slightly increase the time with each infusion; the cup becomes smoother and more vegetal.
