I wanted an Earl Grey worthy of its reputation: not a bland single-origin, but a blend of four black teas — Ceylon, South India, China, and Assam — that gives the natural bergamot a true platform to express itself. The cornflower petals add the floral touch that defines this version. A classic cup, crafted with care.

Brewing timer

Black tea holds well for 3 to 4 minutes at 95°C. Below that, the bergamot lacks presence; beyond that, the Assam can bring bitterness. I recommend 3 minutes for a floral and light cup, 4 minutes for a full-bodied cup with milk.

The four-origin blend

The Ceylon brings the liveliness and clarity typical of Sri Lankan teas — a bright and slightly lemony attack that perfectly serves the bergamot. The South India (Nilgiri) adds floral sweetness and roundness in the mid-palate. The China provides depth and a slight woody note that structures the whole. The Assam is the pillar: body, strength, and slight bitterness in the finish — essential for those who drink it with milk.

The natural bergamot aroma is dosed to blend with the tea without overpowering it — elegant, floral, with that slightly lemony acidity characteristic of great Earl Grey. The cornflower petals add a characteristic blue visual touch and a light floral aroma on the surface.

Plain cup

3 g for 250 ml of water at 95°C, precisely 3 minutes. The cup is golden amber, the bergamot expresses clearly without bitterness. This is my favorite way: plain, without milk, to appreciate the blend’s finesse and the floral notes of the cornflowers.

With milk

Extend infusion to 4 minutes for more body. Pour a splash of hot (not boiling) milk after infusion. Assam holds perfectly: the bergamot remains present, and the whole becomes round and comforting. A complete breakfast cup.

As iced Earl Grey

Double the dosage (6 g / 250 ml), infuse for 4 minutes at 95°C, strain and cool. Serve over ice with a slice of lemon. Bergamot and lemon pair beautifully in the cold version — a refined summer drink.

The classic pairing revisited: a square of 70% dark chocolate with a plain cup. The slight bitterness of Assam and the bergamot echo the roasted notes of the chocolate — a simple and timeless pairing.
