Brewing timer

Sencha is delicate: 75–80°C max, 2 to 3 minutes. Beyond that, bitterness takes over and masks the fruity aromas. I recommend watching the timer.

In a hot cup

3 g for 250 ml at 75–80°C, 2 to 3 minutes. Do not exceed 80°C or 3 minutes: sencha quickly becomes bitter. The cup should be golden-green, floral, and slightly tangy.

Iced infusion

Double the dose (6 g / 250 ml), brew for 3 minutes at 75°C, filter immediately, let cool then pour over ice cubes. A lemon slice on top enhances the freshness. You can also try the cold brew method: 8 g / 500 ml, 8 hours in the fridge, no heating.

The pairing of the moment: in a carafe with fresh mango slices and a few mint leaves. Served at the table, it delights those who usually don’t drink green tea.
