CompositionBotany and Profile

Saemidori (cultivar #4 registered in 1990) is a cross between the Asatsuyu and Yabukita cultivars. Very sensitive to wind and frost, this tea bush is delicate to cultivate but offers the highest concentration of amino acids measured among our vintages.

The tea bushes are grown organically in the Kagoshima terroir, whose warmer southern climate is essential for the survival of this delicate cultivar.

The first sip immediately reveals a deep and enveloping umami, with no trace of astringency or bitterness. The flavor profile then refines into soft floral notes reminiscent of poppy and lavender.

I recommend sifting 2.5 g of powder into a chawan, adding 80 ml of water heated between 70°C and 80°C, then whisking vigorously with a chasen.
