Reference preparation

Prepare water at 85°C to preserve the delicacy of Sencha without burning its leaves, while properly extracting the aromas of black tea. Dose 2.5 g of blend (about one teaspoon) per cup. Steep for exactly 3 minutes, then remove the leaves to avoid over-extracting tannins.

The alternative: Cold brewing

This blend reveals a whole different side when cold brewed. The papaya and floral notes take precedence over astringency. Use about 10 to 12 grams of tea per liter of water, and let it rest in the refrigerator for 6 hours before straining.
