CompositionThe nobility of the pure bud

Bai Hao Yin Zhen (Silver Needle) is the quintessence of white tea. It completely excludes the leaf to retain only the promise of the plant: the terminal bud.

Visual integrity

The picking consists of young shoots covered with a protective silver down. These "needles" attest to a demanding spring harvest, before the leaf fully unfolds.

Cup profile

The liquor is clear, a very pale ivory yellow. The mouthfeel is soft, almost honeyed, evolving towards notes of white flowers and fresh hay. The silky texture coats the palate without any bitterness.

ExpertiseMy rarity selection from Fujian

I selected this cru for its rigorous sorting. The quality of a Bai Hao Yin Zhen is measured by its purity: no leaf debris should cloud the liquor. Its minimal processing (withering and slow drying) respects the original delicacy of the plant.

TipsMy extraction protocol

Reference preparation

The delicacy of the bud requires tempered water, ideally between 80°C and 85°C. Use 2.5 grams (the buds are bulky) for 250 ml of water. Infuse for 3 to 5 minutes for a clear and airy cup.

Variations and Gong Fu Cha

  • The second infusion: The large bud releases its aromas slowly. The second infusion (at 85°C for 4 minutes) is often rounder and more honeyed than the first.
  • Short extraction: For a small volume (Gong Fu Cha), use 4g for 120 ml of water. Multiply short infusions (30 to 40 seconds) to observe the floral evolution of the liquor.
The art of sharing: Silver Needle is the tea of silent hospitality. Serve it in a glass teapot to allow your guests to admire the slow vertical rehydration of the buds.
FAQFrequently Asked Questions
Rarity Why is this white tea considered so precious?

Bai Hao Yin Zhen is made exclusively of unopened terminal buds. Their demanding harvest, limited to a few weeks in spring, and rigorous sorting explain the rarity of this grand cru.

Taste What is the flavor profile of a true Silver Needle?

This white tea offers a crystalline liquor, free of bitterness. It features delicate floral notes, a silky texture, and sometimes a vegetal hint reminiscent of fresh hay or light honey.

Temperature What water temperature should be used to prepare it?

It is essential to use water between 80°C and 85°C. A higher temperature could shock the delicate bud and mask its most subtle nuances.

Re-infusion Can Bai Hao Yin Zhen buds be re-infused?

Yes, these large buds release their aromas gradually. You can make 3 to 4 successive infusions, with the second often being the roundest and most expressive.
