The leaves and buds, picked only a few days a year, are delicately hand-rolled. This ancestral gesture preserves the silver down (the pekoe) that testifies to the youth and tenderness of the harvest.

Reference preparation

White Monkey Pekoe is sensitive to heat. I recommend water at 75°C. Use 2.5 grams of leaves (about a heaping teaspoon) for 250 ml of water. Steep for 5 minutes to release the creaminess of the buds.

Variations

  • Multiple infusions: This white tea is generous. Don’t discard the leaves after the first brew. You can reuse them 3 times, slightly increasing the temperature (80°C) on the last infusion.
  • Natural tasting: I recommend enjoying it without sugar or milk to not mask the delicate vegetal and honeyed notes.

Its name comes from the legend that its leaves, growing on steep slopes, were once picked by trained monkeys. Today, its fuzzy and silvery appearance also resembles the paw of a white monkey.

Type Is it a white tea or a green tea?

Although often classified with green teas for its freshness, minimal processing, and use of fuzzy-budded cultivars bring it closer to white teas. It’s a transitional tea, very mild and without bitterness.

Caffeine Can I drink it in the evening?

It contains a moderate amount of caffeine. Its richness in L-theanine promotes a state of mental relaxation. If you are sensitive, prefer to consume it before 5 p.m.

Fuzz What is the fine white dust on the leaves?
