The terroir of La Cumbre

The extreme altitude (up to 2050 m) slows the tea plant's metabolism. This natural stress concentrates sugars and amino acids in the leaf, eliminating aggressive astringency to give way to a persistent malty sweetness.

Leaf appearance

The leaves are processed using the orthodox method. Long, twisted, and matte black, they release a deep amber liquor evoking the roundness of mild cocoa and stone fruits.

Reference preparation

I recommend a temperature of 95°C to avoid shocking the high-altitude leaf. Use 2.5 grams of tea for 250 ml of water. Infuse for 4 to 5 minutes to obtain a perfectly structured cup.

Variations

  • Stronger version: To accompany a hearty breakfast, extend the infusion to 5 minutes with 3 grams of leaves. The malty side will then take over the fruitiness.
  • Second infusion: These high-quality whole leaves allow for a second extraction. Infuse then at 100°C for 6 minutes.

Origin Why is Colombian tea so rare?

Colombia has long favored coffee cultivation. Tea production there is very recent and localized to a few high-altitude volcanic terroirs. It’s a rare origin, highly sought after by lovers of rare teas.

Temperature Why 95°C instead of 100°C?

Boiling water can sometimes extract tannins too quickly, making the cup bitter. At 95°C, the fruity complexity and Andean roundness that characterize this batch are preserved.

Milk Can milk be added?

Yes. Its malty structure pairs well with a splash of milk, but I recommend tasting it plain first to appreciate its original vegetal sweetness.

Sleep Does it contain a lot of caffeine?

It has a moderate caffeine content. It’s a tea that awakens without the nervous spike effect of coffee, ideal for steady alertness throughout the morning.
