Assam Borsillah requires water at 95°C. Use 2.5 grams of pellets for 250 ml of water. Steep for 3 minutes for a balanced plain tasting. If the cup becomes too bitter, reduce the time rather than the temperature.

The "Breakfast" version

  • With milk: Extend the infusion to 5 minutes to strengthen the liquor. Then add a splash of milk (or oat milk). The proteins will soften the tannins to reveal an exceptional honeyed and malty sweetness.

Astringency Is it a very bitter tea?

Assam is a naturally astringent tea, which gives it that body in the mouth. Bitterness only appears if you over-steep the pellets (beyond 4 minutes plain). With milk, this strength turns into roundness.
