CompositionThe noble broken grade (FBOP)

The appearance of this tea, with its deliberately broken leaves and golden tips, defines the FBOP (Flowery Broken Orange Pekoe) grade.

The advantage of broken tea

Breaking the leaves allows for a faster and more intense extraction of aromatic compounds. This is not a sorting defect but a technical choice to obtain a fuller-bodied and more responsive liquor during infusion.

The role of the tips

Golden tips are the tenderest parts of the tea plant. They naturally soften the astringency of Assam black tea, bringing a velvety texture and honey nuances that add complexity to the tasting.

ExpertiseMy selection from the Moran company

I chose this batch from the Brahmaputra Valley for its consistency and exemplary aromatic density, typical of great Indian teas.

TipsMy extraction protocol

Reference Preparation

Extracting Assam Moran requires water at 95°C. Use 2.5 grams of leaves for 250 ml of water. Infuse for 3 minutes for a plain tasting that preserves the honeyed nuances of the buds.

The Breakfast Tradition

  • With milk: Extend the infusion to 4 minutes. The robust structure of the tea will perfectly support a splash of milk, which will round out the tannins for maximum comfort.
  • Gong Fu Cha: Although it is a broken leaf, you can infuse it in short bursts (45 seconds) to observe the malt evolving towards woodier notes.
The art of sharing: Assam Moran is the perfect companion for brunches. Its strength pairs beautifully with eggs, bacon, or buttered toast.
FAQFrequently Asked Questions
Broken Are broken leaves less good?

On the contrary, in the case of a breakfast Assam, broken leaves are sought after. They extract the strength and body of the tea much more effectively than a whole leaf, while maintaining great finesse thanks to the golden tips.

Milk Is it necessary to add milk?

No. This FBOP grade is noble enough to be enjoyed plain. Milk is a traditional option that highlights the creamy side of the malt, but it is not necessary to mask bitterness, which is very well controlled here.

Energy Does it contain a lot of theine?

Yes, Assam Moran naturally contains a high level of theine. It is one of the best teas to replace coffee in the morning, offering stable and lasting alertness without nervousness.

Taste What flavors dominate on the palate?

Malt is the main signature. It is accompanied by notes of toasted bread, warm wood, and a slightly sweet finish reminiscent of dark honey or stewed fruits.
