Reference preparation

Brewing Oolong requires water at 85°C. Use 2.5 grams of leaves (rolled into small balls) for 250 ml of water. Steep for 2 minutes. The liquor will take on a beautiful golden color. Oversteeping would make the tea stronger, but Oolong has the advantage of resisting bitterness very well.

Variations and Gongfu Cha

  • Multiple infusions: Rolled leaves are meant to gradually open. You can re-infuse the same tea 3 to 4 times, adding 30 seconds each time. The first cup will be very milky, the following ones more floral.
  • Indulgence: It’s perfectly fine to steep it slightly longer (3 minutes) to get a fuller cup, ideal to accompany a dry pastry.
