The Bancha base

Bancha green tea comes from more mature leaves, harvested after the young spring shoots (Sencha). This maturity gives the leaf a naturally low caffeine content and a less sharp vegetal profile, ideal for fading behind the aromatic strength of the rice.

Roasting of brown rice

The rice (genmai) is roasted through a controlled process. Some grains pop under the heat, resembling popcorn. This roasting brings a natural sweetness, hazelnut notes, and a roundness on the palate that completely masks the bitterness of green tea.

The balance of Genmaicha requires water at 80°C. Use 2.5 grams of blend for 250 ml of water. Infuse for 2 to 3 minutes. Boiling water would crush the rice aromas under the astringency of the tea leaves.

  • Summer Iced Tea: Cold brew (10g per 1L in the refrigerator for 8 hours). The result is an incredibly refreshing drink with a sweet cereal flavor.
  • Stronger infusion: You can extend the infusion up to 4 minutes if you prefer to emphasize the toasted side, but the finish will be slightly drier.
