Fixation process

The Sha Qing method (heat fixation) is used to stop enzymatic oxidation immediately after harvest. The leaves are precisely heated, preserving their intense green color and antioxidant compounds, before being delicately hand-twisted.

I recommend water at exactly 75°C. Use 3.5 grams of leaves for 250 ml of water. Infuse precisely for 2 minutes. Immediately remove the leaves to lock in the honeyed aromas and stop tannin extraction.

The Gongfu Cha method

  • Increase the dosage (5 grams for a small 150 ml gaiwan).
  • Proceed with short, repeated infusions of 20 to 30 seconds. This traditional technique allows the aromatic profile of Mao Feng to unfold and be observed evolving cup after cup.
