I built Earl Grey Deluxe Lady Star on a blend of three black teas — Ceylon, South India and China — then flavoured it with bergamot, pieces of orange and lemon, and a few cornflower petals for colour. The result is a full-bodied, bright Earl Grey, more complex than bergamot alone.

Pieces of orange and lemon add a zesty lift on the palate, while the cornflower petals, purely decorative, give the dry blend its characteristic blue flecks.

Most Earl Greys rely on a single base black tea. I preferred a three-origin blend so the bergamot sits on a denser, more stable liquor that doesn't fade behind the flavouring.

Plain

I recommend 3g for 250ml of water at 100°C, steeped for 2 to 4 minutes depending on the intensity you're after. Shorter for a light cup, longer for a bolder bergamot.

With milk

The structure of the three black teas holds up well to a splash of milk, which softens the bergamot without erasing the citrus.

A little variation: a slice of fresh orange in the cup extends the citrus note even further, for a more indulgent version.
