2 to 3 minutes at 70-80°C: just enough for the matcha to disperse in the cup without the roasted rice turning bitter.
The base is an organic genmaicha: green tea paired with roasted brown rice, the traditional recipe that gives these popcorn notes. A fine matcha powder is then dusted over the blend.

TipsMy brewing protocol
In the cup
I recommend 3 to 4g for 250ml of water at 70-80°C, steeped for 2 to 3 minutes. Water that's too hot brings out the bitterness of the roasted rice and masks the sweetness of the matcha.
Second infusion
A second, slightly shorter infusion remains very pleasant: the matcha powder keeps lightly colouring the water.
A small tip: gently stir the cup before serving, as matcha powder tends to settle at the bottom of the pouch.

Comment préparer le matcha ?
Tamisez 1 à 2 g de matcha (½ à 1 cuillère bambou) dans un bol. Versez 60–70 ml d'eau à 70–80 °C, puis fouettez vivement en W avec le chasen jusqu'à obtenir une mousse fine.
Quelle température pour infuser le thé vert ?
Entre 70 et 80 °C pour préserver la douceur et éviter l'amertume. 1 à 2 minutes d'infusion suffisent ; vous pouvez réinfuser les feuilles 2 à 3 fois.
Comment conserver mon thé ?
À l'abri de l'air, de la lumière, de l'humidité et des odeurs, dans une boîte hermétique opaque. Évitez le réfrigérateur. Consommez idéalement dans les 12 mois.
