Many give up green tea in the afternoon fearing astringency or insomnia. Uji Houjicha is the elegant solution to this problem. I source these Bancha leaves (a later harvest) directly from Uji, Kyoto.
The secret of the heat
Rather than simply dried, these leaves are roasted at very high temperatures (up to 200°C) in porcelain tanks. This heat changes the plant’s structure: the color shifts from green to copper, bitterness is destroyed, and caffeine evaporates massively.

The classic infusion (Evening)
Unlike delicate green teas, Houjicha loves very hot water. Pour water at 95°C over your leaves (about 2.5g for your mug). Let steep for 3 to 4 minutes. It will easily forgive a few minutes of forgetting.
The Houjicha Latte (Indulgent)
Make a very concentrated infusion (5g of leaves for 100ml boiling water for 3 minutes). Filter. Add 150ml of heated and frothed milk (whole or plant-based). A touch of maple syrup makes it an irresistible drinkable dessert.
The Iced Houjicha (Cold Brew)
For summer: 5g of tea for 500ml of cold water. Leave in the refrigerator overnight (at least 6 hours). Filter in the morning. You get a refreshing iced tea with a pure roasted cereal flavor.

CaffeineWhy do you say it contains almost no caffeine?
It’s not magic, it’s chemistry. Roasting at 200°C destroys and evaporates most of the caffeine naturally present in the plant. With only 7 to 20 mg per cup (compared to about 100 mg for coffee), it won’t disturb your sleep.
StorageHow do I manage a one-kilo bag at home?
My advice: upon receipt, don’t open the bag every day. Transfer 100 to 200g into a nice airtight metal box (or an old bag) for your daily use, and keep the rest of the kilo well sealed in a dry cupboard. You will preserve perfect aromas for many months.
TasteDoes it really taste like classic green tea?
Absolutely not. If you let a friend taste it without telling them what it is, they will think they are drinking a hazelnut infusion or a very light coffee. Roasting removes all the vegetal notes of green tea, leaving only a warm, woody, praline flavor.
SavingsIs it really more cost-effective?
Yes, the math is quick. You save more than 50% compared to buying successive 100g bags. If you drink two cups a day (alone or with family), your kilo will last about 6 months. It's the smartest purchase by far.

Comment préparer le matcha ?
Tamisez 1 à 2 g de matcha (½ à 1 cuillère bambou) dans un bol. Versez 60–70 ml d'eau à 70–80 °C, puis fouettez vivement en W avec le chasen jusqu'à obtenir une mousse fine.
Quelle température pour infuser le thé vert ?
Entre 70 et 80 °C pour préserver la douceur et éviter l'amertume. 1 à 2 minutes d'infusion suffisent ; vous pouvez réinfuser les feuilles 2 à 3 fois.
Comment conserver mon thé ?
À l'abri de l'air, de la lumière, de l'humidité et des odeurs, dans une boîte hermétique opaque. Évitez le réfrigérateur. Consommez idéalement dans les 12 mois.
