With this Akatsuki Ceremonial Matcha, I offer a mineral experience with no bitterness. Grown on the single-origin terroir of Wazuka by the Nakai-san farm, this 2022 vintage is a pure Yabukita cultivar. The result is a dense liquor offering an earthy and lively attack, followed by a sweet finish evoking vanilla and red fruits.

Brewing timer

Use my interactive online timer to precisely respect the 0.5-minute emulsification required for this vintage.

CompositionStone mill grinding

This fine powder comes from shaded leaves (Tencha) whose veins and stems have been carefully removed to keep only the leaf flesh (the lamina).

Terroir and Cultivation

The tea bushes are grown organically on the Wazuka terroir in Japan by our farming partner Nakai-san.

Aromatic Profile

The attack unfolds intense green, mineral, and earthy notes, supported by an umami structure. The finish evolves towards nutty notes and a sweetness reminiscent of red fruits and vanilla, often associated with a marbled cake aroma.

ExpertiseMy Wazuka selection

This specialty grade results from a strict separation of skills: the plant cultivation is handled by the farmer to obtain the best Tencha, while the processing and precise grinding are done by the producer.

  • For discovery: Beginners curious to try a matcha without bitterness and with vanilla notes.
  • For the enthusiast: Regular enthusiasts seeking a pure, unblended cultivar.

TipsMy extraction protocol

The reference emulsion (Usucha)

I recommend sifting 2 g of powder into a chawan, adding 70 ml of water at 70°C, then whisking vigorously in a "W" shape with a chasen until a fine, dense foam forms.

Variations

  • Thick preparation (Koicha): 4 to 5 g of powder for 30 ml of water at 80°C.
  • Cold preparation (Coldbrew): 1 to 2 g of powder for 250 ml of cold water, shaken vigorously in a shaker.
The art of sharing: This Yabukita matcha reveals its full vanilla aromatic complexity when prepared cold and shared during warm summer days.
FAQFrequently Asked Questions
Blend Is this matcha a blend of several cultivars?

No, this grand cru comes exclusively from the Yabukita cultivar. This single origin approach allows you to taste the specific aromatic signature of this plant, unlike the usual blends.

Storage How to store this specialty matcha?

Green tea powder is very sensitive to oxidation. I recommend storing this matcha in the refrigerator after opening, in its airtight pouch, protected from moisture and light.
