Brewing timer
Sencha and pai mu tan are delicate leaves: 75 to 80°C, no more, and 2 to 3 minutes max. Water that’s too hot or steeping too long would erase the floral lightness that makes this cup so charming.

In a hot cup
3 g for 250 ml at 75–80°C, 2 to 3 minutes. Avoid boiling water: at 100°C, sencha becomes bitter and the delicacy of Pai Mu Tan disappears. The cup should be pale golden, with a slight fruity steam on opening.
As iced infusion
Double the dose (6 g / 250 ml), brew for 3 minutes at 75°C, filter immediately. Cool and pour over ice cubes. The mango and orange aromas intensify in the cold version — the cup becomes lively, fruity, and very refreshing.
